EVOO with a green fruity, medium. It reminds us of the olive leaves and the tomato plant above all. On the palate it is an EVOO that provides us with soft notes of bitterness and spiciness that caress our mouth and throat, being very balanced. EVOO with great personality and a lot of body.
This EVOO is the most intense of itching, it is a coupage of traditional way with a careful selection of olives100% organic, 70% cornicabra and 30% picual.
About us:
History: EVOO ORO LA SENDA ALMAZARA began as a family project of the Jaime brothers, from La Solana, becoming owners of an organic farm. Since we were very young we have helped our father in the work of cultivating the olive grove.
Facilities: Our facilities are fully air-conditioned for the conservation, throughout the year, of our EVOO. That is why we decided to also have the most advanced machinery on the market, SINTESI, specially designed for productions with high phenolic compounds. The work cycle can be continuous or discontinuous. The crusher is separate, equipped with an inverter to adjust the crushing revolutions.
Conservation: Our cellar and bottling plant are fully air-conditioned to preserve the temperature, throughout the year, between 14ºC and 20ºC, so that the EVOO reaches the customer in its natural state and thus all the organoleptic characteristics can be appreciated for a longer period of time, sensory and differentiating
olive groves: Our plots are located in the heart of Castilla La Mancha, in different terms of La Solana and its surroundings. There are approximately 7,000 olive trees of the picual and cornicabra variety, dry land, mostly planted in an 8×8 frame.
Harvest: Harvesting is the most important and delicate process. The olive harvest is carried out practically manually, with which we only collect the fruits that are on the tree, discarding all those that have fallen to the ground due to the wind or due to their early ripening.
