Queseria Artesanal el Zamorral makes its products exclusively with raw sheep’s milk obtained directly from their own herds. Raw sheep’s milk cheese is one in which the milk has not previously gone through a pasteurization process, so an authentic product is achieved, with its own unique personality.
This old cheese has a maturation period of over 7 months and is characterized above all by having a more intense flavor than semi-cured or cured cheeses, which is why it is perfect for all of you who like cheese with a strong touch and aromas. and flavors already difficult to find in other types of cheeses.

Pure Sheep Cheese: Quesos el Zamorral makes its products exclusively with raw sheep’s milk obtained directly from their own herds. Without any kind of additives or mixtures. The sheep are fed with selected natural pastures. The entire process is carried out by hand in our facilities.
Differences with Pasteurized Milk Cheese: The main difference lies in the temperature that has been applied. Raw milk cheeses are not subject to pasteurization because the milk is not heated to a temperature higher than 35º C. This means that they maintain their flavor better, but they also contain a higher proportion of bacteria that must be balanced with the addition of ferments.
Ease of Storage: The cheese without introducing intooilshould be kept as cool as possible, so I know It is recommended to keep it in the lower part of the refrigerator.. However, if it is soaked in olive oil it is best to keep it in the pantry.

Characteristics: They have an opulent and slightly spicy flavor with an undertone of sweetness, sour and salty. They have a soft and greasy texture, however it is a consistent cheese, it also has a smell of dairy, hay, herbs, flowers and spices.
